Ingredients
1,5 cup of fresh or frozen blueberries
1/2 cup tagatose (or 3/4 cup sugar)
1,5 cup cream (can be normal, light or soy)
1 cup milk
2 egg yolks
1/4 tsp vanilla extract
1/4 cup water
1 tsp lemon juice
Method
In a sauce pan heat the water and melt tagatose (or sugar) in it. Add lemon juice and blueberries and cook for about 5 min. Let it cool off a bit and purée the mixture.
In another pan heat up (but don’t cook) the cream and milk. In a bowl combine the cream with beaten egg yolks. Add the blueberry mixture. Place in the fridge for at least 1.5 hour to chill (I made my mixture the evening before and let it in the fridge for the night). Pour the mixture in the ice cream maker and try not to eat it before it’s ready (I know it’s not easy at all, I ate 1/4 of the mixture before it got to the ice cream maker).

Hi there… yes i also love the pictures and your ice cream looks delicious.. i plan on trying this recipe a little later today. The kids and i are in for a nice treat later… The color reminds me of my favorite ice cream in the world.. it’s a purple ice cream which derives it’s color and flavor from a purple sweet yam found in southeast asia called Ube. i had it in the Philippines when i was there.. you should look it up and try it if you can possibly find it anywhere, you won’t be sorry, and you will be treating yourself and your friends to something i am sure they have never and may never taste anywhere else… it is perhaps the most popular flavor in the Philippines for good reason… Ube ice cream is also one of the ingredients used in making another hugely popular dessert in the Philippines called halo-halo, which is also my favorite dessert in the world, esspecially served in a fresh cocanut shell… mmm yummy!!
