Ingredients (serves 4-6)
1kg new potatoes
2 tablespoons olive oil
Herbs (rosemary, thyme, oregano etc)
2 cloves of garlic, pressed or finely chopped
Sea salt
Method
Wash and dry your potatoes and put them in a bowl. Toss the garlic, herbs and olive oil into a bowl and stir so all the potatoes are covered.
Preheat the oven to 200°C. Put potatoes in a roasting tray and cook in the oven for about 45 minutes until golden. Season with sea salt and serve!
